1. Spectrum In-House Recipe - Brews a simple, syrupy shot with good clarity.
Materials
- Espresso Machine
- 19.5g coffee
- Grinder (must be espresso-grind capable)
- Kitchen scale
- Timer
Preparation
- Grind 19.5g of you preferred coffee on fine/espresso. The consistency should be more like powder than sand.
- Distribute the coffee grounds evenly in your portafilter with your finger or your desired implement.
- With the portafilter resting on the edge of a table, firmly tamp the espresso while being sure to press directly down. The espresso should be not fall out of the portafilter when flipped upside-down.
- Insert your portafilter into the grouphead of the espresso machine. Start your the shot and your timer. We want to weigh the espresso as it comes out, so place your scale and a cup underneath the portafilter. The goal is to stop your shot around 39-40g over about 25 seconds. You can adjust your grinder finer to slow the shot down, or coarser to speed it up.
