The town of Chota lies on the eastern slope of the Peruvian Andes, watered by three rivers draining from the west out of the Amazon Basin. The site has been cultivated for at least several thousand of years, perhaps longer. The surrounding lands have revealed archaeological evidence of pre-Inca cultures Chavin, Mari, and Moche dating back to at least the 2nd millenium BCE. The town today is the seat of the Roman Catholic prelature -- or territory unbelonging to any particular diocese. The cultivation and processing techniques used by the producers here result in stellar, clean, and complex washed coffees. |
